Ingredients

- 3 cups mashed sweet potatoes
- 1/2 cup granulated sugar
- 2 eggs, beaten
- 1/2 teaspoon salt
- 4 tablespoons butter, softened
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 1/2 cups mini marshmallows
Instructions
- Preheat oven to 350°F (175°C).
- Mix mashed sweet potatoes, sugar, eggs, salt, butter, milk, and vanilla in a bowl.
- Pour mixture into a greased baking dish.
- Bake for 25 minutes.
- Remove from oven and top with marshmallows.
- Return to oven and bake for an additional 10 minutes or until marshmallows are golden.
Notes
- Use freshly boiled and mashed sweet potatoes for best texture.
- For extra flavor, sprinkle cinnamon or nutmeg before baking.
- Let cool slightly before serving.
