A deliciously sweet and creamy sweet potato casserole topped with a crunchy pecan streusel.

- 4 sweet potatoes
- 1/2 sugar
- 1/2 butter (melted)
- 1/2 milk
- 1 vanilla extract
- 2 eggs
- 1/2 brown sugar
- 1/2 chopped pecans
- 1/3 all-purpose flour
- 1 cinnamon
Instructions
- Preheat your oven to 350°F (175°C).
- Peel and chop the sweet potatoes, then boil them in a pot of water until tender, about 15-20 minutes.
- Drain the sweet potatoes and return them to the pot. Mash until smooth.
- Stir in the sugar, melted butter, milk, vanilla extract, and eggs until well combined.
- Pour the sweet potato mixture into a greased 9×13 inch baking dish.
- In a separate bowl, mix together the brown sugar, chopped pecans, flour, and cinnamon for the topping.
- Sprinkle the pecan mixture evenly over the sweet potato mixture.
- Bake for 25-30 minutes or until the topping is golden brown.
- Let cool slightly before serving.
