Ingredients

  • 4 sweet potatoes
  • 1/2 sugar
  • 1/2 butter (melted)
  • 1/2 milk
  • 1 vanilla extract
  • 2 eggs
  • 1/2 brown sugar
  • 1/2 chopped pecans
  • 1/3 all-purpose flour
  • 1 cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Peel and chop the sweet potatoes, then boil them in a pot of water until tender, about 15-20 minutes.
  3. Drain the sweet potatoes and return them to the pot. Mash until smooth.
  4. Stir in the sugar, melted butter, milk, vanilla extract, and eggs until well combined.
  5. Pour the sweet potato mixture into a greased 9×13 inch baking dish.
  6. In a separate bowl, mix together the brown sugar, chopped pecans, flour, and cinnamon for the topping.
  7. Sprinkle the pecan mixture evenly over the sweet potato mixture.
  8. Bake for 25-30 minutes or until the topping is golden brown.
  9. Let cool slightly before serving.
