- 1 pound pork tenderloin, thinly sliced
- 2 tablespoons soy sauce
- 1 tablespoon cornstarch
- 2 tablespoons vegetable oil
- 1 bell pepper, sliced
- 1 cup pineapple chunks (fresh or canned)
- 1/2 cup onion, sliced
- 2 cloves garlic, minced
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 1/4 cup brown sugar
- 1 tablespoon soy sauce
- 1 tablespoon cornstarch mixed with 2 tablespoons water
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- In a bowl, combine sliced pork with 2 tablespoons soy sauce and 1 tablespoon cornstarch. Mix well and let marinate for 15 minutes.
- In a large skillet or wok, heat vegetable oil over medium-high heat. Add the marinated pork and stir-fry until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add bell pepper, onion, and garlic. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
- Add pineapple chunks to the skillet and stir to combine.
- In a small bowl, mix ketchup, rice vinegar, brown sugar, and 1 tablespoon soy sauce. Pour this sauce over the vegetables and stir well.
- Return the cooked pork to the skillet. Stir in the cornstarch mixture and cook until the sauce thickens, about 2 minutes. Season with salt and pepper to taste.
- Serve the sweet and sour pork stir-fry over cooked rice.
Notes
- Feel free to add other vegetables like broccoli, snap peas, or carrots.
- You can substitute pork with chicken or tofu for a different protein option.
