  • 2 tablespoons soy sauce
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 bell pepper, sliced
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 cup onion, sliced
  • 2 cloves garlic, minced
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 1/4 cup brown sugar
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons water
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a bowl, combine sliced pork with 2 tablespoons soy sauce and 1 tablespoon cornstarch. Mix well and let marinate for 15 minutes.
  2. In a large skillet or wok, heat vegetable oil over medium-high heat. Add the marinated pork and stir-fry until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
  3. In the same skillet, add bell pepper, onion, and garlic. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.
  4. Add pineapple chunks to the skillet and stir to combine.
  5. In a small bowl, mix ketchup, rice vinegar, brown sugar, and 1 tablespoon soy sauce. Pour this sauce over the vegetables and stir well.
  6. Return the cooked pork to the skillet. Stir in the cornstarch mixture and cook until the sauce thickens, about 2 minutes. Season with salt and pepper to taste.
  7. Serve the sweet and sour pork stir-fry over cooked rice.
