- 2 lbs of beef roast
- 4 cups of potatoes, diced
- 2 cups of carrots, sliced

- 4 cups of beef broth

Instructions
- Preheat your oven to 350°F (175°C).
- Season the beef roast with salt, pepper, and garlic.
- In a large skillet, heat olive oil over medium heat and brown the roast on all sides.
- Place the roast in a roasting pan with potatoes, carrots, onion, and rosemary.
- Pour beef broth over the roast and vegetables.
- Cover with foil and bake for 2.5 to 3 hours.
- Remove the foil for the last 30 minutes to brown the roast.
- Let the roast rest for 10 minutes before slicing.
- Serve with vegetables and broth.
