Ingredients

  • 2 cups of cooked quinoa
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup of red onion, finely chopped
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of feta cheese, crumbled
  • 3 tablespoons of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions and let it cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and parsley.
  3. Add the cooled quinoa to the bowl.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the quinoa and vegetable mixture.
  6. Toss gently to combine.
  7. Sprinkle feta cheese on top before serving.

Notes

  • Serve cold or at room temperature.
  • Can be made a day in advance.
