Ingredients

  • 2 cups of cooked quinoa
  • 1 cup of cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup of red onion, finely chopped
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions and let it cool.
  2. In a large bowl, combine quinoa, cherry tomatoes, cucumber, bell pepper, and red onion.
  3. Add feta cheese to the mixture.
  4. In a separate bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve chilled or at room temperature.
