Ingredients

  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced

  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, combine quinoa and water. Bring to a boil.
  3. Reduce heat and cover. Simmer for 15 minutes.
  4. Fluff quinoa with a fork and let it cool.
  5. In a large bowl, combine diced cucumber, bell pepper, cherry tomatoes, and red onion.
  6. Add cooled quinoa to the vegetable mixture.
  7. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  8. Pour the dressing over the salad and toss to combine.
  9. Serve chilled or at room temperature.
