A refreshing and colorful summer fruit tart that showcases the best seasonal fruits in a buttery crust with a smooth cream filling.

- 1 pre-made pie crust or tart shell
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 cups mixed summer fruits (strawberries, blueberries, raspberries, peaches, etc.)
- 1/4 cup apricot preserves or fruit glaze
Instructions
- Preheat the oven to 350°F (175°C). If using a raw pie crust, bake according to package instructions until golden brown, then let cool.
- In a mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
- Spread the whipped cream mixture evenly over the cooled tart shell.
- Arrange the mixed summer fruits on top of the cream layer in a decorative pattern.
- In a small saucepan, warm the apricot preserves over low heat until melted, then brush it over the fruits to give a nice glaze.
- Chill the tart in the refrigerator for at least 1 hour before serving.
