- 1 cup salsa
- 1 can black beans, drained
- 1 cup corn, frozen
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup diced tomatoes
Instructions
- Place chicken breasts in the crockpot.
- Add salsa, black beans, corn, diced tomatoes, cumin, and chili powder.
- Stir to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Shred chicken before serving.
Notes
- Serve with tortillas or over rice.
- Can substitute chicken with tofu for a vegetarian option.
- Add avocado or cilantro for garnish.
