- 2 bell peppers
- 1 red onion
- 1 zucchini

- 2 ears fresh corn
- 1/4 cup cilantro
- 2 tbsp lime juice
Instructions
- In a bowl, combine chicken, bell peppers, red onion, zucchini, olive oil, garlic powder, paprika, salt, and black pepper. Toss to coat and marinate for at least 30 minutes.
- Preheat the grill to medium-high heat. Thread the marinated chicken and vegetables onto skewers.
- Grill the skewers for about 10-12 minutes, turning occasionally, until the chicken is cooked through and the vegetables are tender.
- Meanwhile, in a separate bowl, combine corn kernels, cilantro, lime juice, salt, and pepper to make the corn salad.
