- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 4 oz cream cheese, softened
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1/2 cup chicken broth
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the chopped spinach, cream cheese, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper. Mix until well combined.
- Using a sharp knife, carefully cut a pocket into each chicken breast, making sure not to cut all the way through.
- Stuff each chicken breast with the spinach and cheese mixture, securing with toothpicks if necessary.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
- Pour the chicken broth into the skillet, then transfer the skillet to the preheated oven.
- Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove from the oven and let rest for 5 minutes before serving.
Notes
- Feel free to add your favorite herbs or vegetables to the stuffing mixture.
- For an extra kick, consider adding some crushed red pepper flakes to the filling.
