  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup cream cheese, softened
  • 2 cloves garlic, minced
  • 1 teaspoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add chopped spinach to the skillet and cook until wilted. Remove from heat and let cool slightly.
  4. In a bowl, combine the cooked spinach, feta cheese, cream cheese, oregano, salt, and pepper. Mix until well combined.
  5. Using a sharp knife, create a pocket in each chicken breast by slicing horizontally, being careful not to cut all the way through.
  6. Stuff each chicken breast with the spinach and feta mixture, securing the opening with toothpicks if necessary.
  7. Season the outside of the chicken breasts with paprika, salt, and pepper.
  8. Place the stuffed chicken breasts in a baking dish and cover with foil.
  9. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through (internal temperature of 165°F or 74°C).
  10. Remove the foil during the last 10 minutes of cooking for a golden finish.
