- 4 large bell peppers
- 1 lb ground turkey
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tsp paprika
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 cup shredded cheese
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds.
- In a skillet, heat olive oil and cook onions and garlic until soft.
- Add ground turkey and cook until browned.
- Stir in rice, diced tomatoes, and seasonings.
- Stuff the bell peppers with the mixture and place in a baking dish.
- Top with shredded cheese.
- Bake for 25-30 minutes until peppers are tender.
Notes
- Use any color bell peppers you prefer.
- For extra flavor, add a pinch of red pepper flakes.
