Stuffed Bell Peppers: Irresistible Recipe Baked to Perfection

Delicious bell peppers filled with a savory mixture of ground meat, rice, and spices, baked to perfection.


Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes with juice
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
  3. In a skillet over medium heat, cook the ground meat until browned. Drain excess fat.
  4. Add the diced onion and garlic to the skillet and sauté until the onion is translucent.
  5. Stir in the cooked rice, diced tomatoes (with juice), Italian seasoning, salt, and pepper. Mix well.
  6. Stuff each bell pepper with the meat and rice mixture, pressing down gently to pack it in.
  7. Place the stuffed peppers upright in a baking dish. If needed, you can add a small amount of water to the bottom of the dish to help steam the peppers.
  8. Cover the dish with aluminum foil and bake for 25 minutes.
  9. Remove the foil and sprinkle cheese on top of each pepper. Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired. Serve warm.

Notes

  • You can customize the filling by adding other vegetables, beans, or spices.
  • For a vegetarian version, substitute the meat with black beans or lentils.
