Delicious bell peppers filled with a savory mixture of ground meat, rice, and spices, baked to perfection.
Ingredients

- 4 large bell peppers (any color)
- 1 pound ground beef or turkey
- 1 cup cooked rice
- 1 can (15 oz) diced tomatoes with juice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup shredded cheese (cheddar or mozzarella)
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Set aside.
- In a skillet over medium heat, cook the ground meat until browned. Drain excess fat.
- Add the diced onion and garlic to the skillet and sauté until the onion is translucent.
- Stir in the cooked rice, diced tomatoes (with juice), Italian seasoning, salt, and pepper. Mix well.
- Stuff each bell pepper with the meat and rice mixture, pressing down gently to pack it in.
- Place the stuffed peppers upright in a baking dish. If needed, you can add a small amount of water to the bottom of the dish to help steam the peppers.
- Cover the dish with aluminum foil and bake for 25 minutes.
- Remove the foil and sprinkle cheese on top of each pepper. Bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let cool for a few minutes. Garnish with fresh parsley if desired. Serve warm.
Notes
- You can customize the filling by adding other vegetables, beans, or spices.
- For a vegetarian version, substitute the meat with black beans or lentils.
