- 4 large bell peppers (any color)
- 1 pound ground beef (or turkey)
- 1 cup cooked rice (white or brown)
- 1 can (15 oz) diced tomatoes, drained
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup shredded cheese (cheddar or mozzarella)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers upright in a baking dish.
- In a large skillet over medium heat, cook the ground meat until browned. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet, cooking until the onion is soft.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and black pepper. Mix well and remove from heat.
- Spoon the meat mixture into each bell pepper, packing it down slightly.
- Top each stuffed pepper with shredded cheese.
- Cover the baking dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden.
- Garnish with fresh parsley before serving.

- You can substitute ground meat with beans or lentils for a vegetarian option.
- Feel free to add other vegetables like corn or zucchini to the filling for extra flavor and nutrition.
- Make ahead by preparing the stuffed peppers and refrigerating them before baking. Add an extra 10 minutes to the baking time if baking from cold.
