  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 can (15 oz) diced tomatoes, drained
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 2 tablespoons olive oil
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish.
  3. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sauté until softened.
  4. Add ground beef to the skillet and cook until browned. Drain excess fat.
  5. Stir in cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Mix well and cook for an additional 2-3 minutes.
  6. Stuff each bell pepper with the beef mixture, pressing down to pack it in. Top with shredded cheese.
  7. Cover the baking dish with foil and bake in the preheated oven for 25 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and cheese is bubbly.
  9. Garnish with fresh parsley if desired and serve hot.
