Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can (15 oz) sweet corn, drained
  • 1 can (10 oz) cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup crushed tortilla chips
  • 2 tablespoons fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, sweet corn, cream of chicken soup, sour cream, cheddar cheese, chili powder, cumin, paprika, salt, and pepper. Mix until well combined.
  3. Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
  4. Sprinkle the crushed tortilla chips over the top of the casserole.
  5. Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the chips are golden brown.
