A delicious and creamy street corn chicken casserole that combines tender chicken, sweet corn, and spices, all baked to perfection.

- 2 cups cooked chicken, shredded
- 1 can (15 oz) sweet corn, drained
- 1 can (10 oz) cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup crushed tortilla chips
- 2 tablespoons fresh cilantro, chopped (for garnish)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, sweet corn, cream of chicken soup, sour cream, cheddar cheese, chili powder, cumin, paprika, salt, and pepper. Mix until well combined.
- Transfer the mixture to a greased 9×13 inch baking dish and spread evenly.
- Sprinkle the crushed tortilla chips over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the casserole is bubbly and the chips are golden brown.
- Remove from the oven and let cool for a few minutes. Garnish with fresh cilantro before serving.
