A delicious and easy strawberry topping that adds the perfect touch to your cheesecake.

- 2 cups fresh strawberries, hulled and sliced
- 1/2 cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
- 1/4 cup water
Instructions
- In a medium saucepan over medium heat, combine the sliced strawberries, sugar, and lemon juice. Cook until the strawberries start to release their juices, about 5 minutes.
- In a small bowl, mix the cornstarch and water until smooth. Slowly stir this mixture into the strawberries.
- Continue to cook, stirring frequently, until the mixture thickens, about 3-5 minutes.
- Remove from heat and let cool to room temperature before using.
- Once cooled, pour the strawberry topping over your cheesecake and serve.
Notes
- You can adjust the sweetness by adding more or less sugar according to your taste.
- This topping can be made in advance and stored in the refrigerator for up to a week.
