- 1 1/2 cups graham cracker crumbs
- 1/3 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 3 (8 oz) packages cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup sour cream
- 1/2 cup strawberry puree
- 1/4 cup fresh strawberries, chopped
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Mix until well combined. Press the mixture into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes and let cool.
- In a large bowl, beat together the cream cheese, 1 cup sugar, and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Then mix in the sour cream until smooth.
- In a separate bowl, combine the strawberry puree and lemon juice. Set aside.
- Pour half of the cheesecake batter over the cooled crust. Drizzle half of the strawberry puree over the batter and use a knife to swirl it into the cheesecake. Repeat with the remaining batter and puree.
- Bake for 55-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and leave the cheesecake inside for 1 hour to cool gradually.
- Remove from the oven and let cool completely at room temperature. Refrigerate for at least 4 hours or overnight before serving.
- Garnish with fresh strawberries before slicing and serving.

- Ensure the cream cheese is at room temperature for a smooth batter.
- You can make the strawberry puree by blending fresh strawberries until smooth.
- For best results, refrigerate the cheesecake overnight to allow the flavors to meld.
