A classic dessert featuring layers of fluffy shortcake, fresh strawberries, and whipped cream. Perfect for summer gatherings!

- 1 heavy cream
- 2 granulated sugar
- 1 vanilla extract
- 2 all-purpose flour
- 1 baking powder
- 1/4 salt
- 1/4 granulated sugar
- 1/2 unsalted butter, cold and cubed
- 1/2 milk
- 2 fresh strawberries, sliced
- 1/4 granulated sugar (for strawberries)
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a mixing bowl, combine flour, baking powder, salt, and sugar. Whisk together.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk until just combined.
- Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick round.
- Cut into rounds using a biscuit cutter and place on the prepared baking sheet.
- Bake for 15-20 minutes or until golden brown.
- While the shortcakes are baking, combine sliced strawberries and sugar in a bowl. Let sit for 10 minutes to macerate.
- In another bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.
- To assemble, slice the shortcakes in half, layer with strawberries and whipped cream, and top with the other half.
Notes
- For extra flavor, add a splash of lemon juice to the strawberries.
- Shortcakes can be made ahead of time and stored in an airtight container.
