Ingredients

  • 1 heavy cream
  • 2 granulated sugar
  • 1 vanilla extract
  • 2 all-purpose flour
  • 1 baking powder
  • 1/4 salt
  • 1/4 granulated sugar
  • 1/2 unsalted butter, cold and cubed
  • 1/2 milk
  • 2 fresh strawberries, sliced
  • 1/4 granulated sugar (for strawberries)

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, combine flour, baking powder, salt, and sugar. Whisk together.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the milk until just combined.
  5. Turn the dough onto a floured surface and gently knead a few times. Pat into a 1-inch thick round.
  6. Cut into rounds using a biscuit cutter and place on the prepared baking sheet.
  7. Bake for 15-20 minutes or until golden brown.
  8. While the shortcakes are baking, combine sliced strawberries and sugar in a bowl. Let sit for 10 minutes to macerate.
  9. In another bowl, whip the heavy cream, sugar, and vanilla extract until soft peaks form.
  10. To assemble, slice the shortcakes in half, layer with strawberries and whipped cream, and top with the other half.

Notes

  • For extra flavor, add a splash of lemon juice to the strawberries.
  • Shortcakes can be made ahead of time and stored in an airtight container.
