- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 4 (8 ounce) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup sour cream
- 2 cups fresh strawberries, sliced
- 1/4 cup strawberry jam
Instructions
- Preheat the oven to 325°F (163°C).
- In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan to form the crust.
- In a large bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla, mixing until combined.
- Add eggs one at a time, mixing well after each addition. Stir in sour cream until smooth.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set and the edges are lightly golden.
- Remove from the oven and let cool completely at room temperature. Refrigerate for at least 4 hours, preferably overnight.
- Before serving, mix sliced strawberries with strawberry jam and spoon over the cheesecake.
Notes
- For a richer flavor, use full-fat cream cheese.
- You can add a layer of whipped cream on top for extra decoration.
- Make sure to allow the cheesecake to cool completely before refrigerating to prevent cracks.
