Ingredients

  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 2 cups fresh strawberries, sliced
  • 1/4 cup strawberry jam

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla, mixing until combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in sour cream until smooth.
  5. Pour the cheesecake filling over the crust in the springform pan.
  6. Bake for 55-60 minutes, or until the center is set and the edges are lightly golden.
  7. Remove from the oven and let cool completely at room temperature. Refrigerate for at least 4 hours, preferably overnight.
  8. Before serving, mix sliced strawberries with strawberry jam and spoon over the cheesecake.
