- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1 (8 oz) package cream cheese, softened
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- 1 cup fresh strawberries, sliced
- 1/4 cup powdered sugar
- 1 teaspoon lemon juice
- Whipped cream for topping
Instructions
- Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan.
- In a bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of the prepared springform pan to form a crust.
- In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition. Then, mix in the sour cream until fully combined.
- Pour the cheesecake batter over the crust in the springform pan. Bake for 50-60 minutes, until the center is set but still slightly jiggly.
- Turn off the oven and let the cheesecake cool inside for 1 hour. Then, refrigerate for at least 4 hours or overnight.
- In a bowl, toss sliced strawberries with powdered sugar and lemon juice. Let them sit for about 15 minutes to macerate.
- Once the cheesecake is chilled, top with the strawberry mixture and whipped cream before serving.
Notes
- For best results, allow the cheesecake to chill overnight.
- Feel free to substitute fresh strawberries with other berries like blueberries or raspberries.
