Ingredients

  • 1 tablespoon sugar
  • 4 (8 oz) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 4 cups fresh strawberries, hulled and sliced
  • 1/4 cup sugar (for strawberries)

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine graham cracker crumbs, melted butter, and sugar. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  3. In a large bowl, beat the cream cheese until smooth. Gradually add sugar and vanilla extract, mixing until combined.
  4. Add eggs one at a time, mixing well after each addition.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 55-60 minutes or until the center is set and the edges are slightly golden. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  7. Remove the cheesecake from the oven and refrigerate for at least 4 hours or overnight.
  8. In a medium bowl, toss sliced strawberries with 1/4 cup of sugar and let them macerate for 30 minutes.
  9. In a separate bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  10. Once the cheesecake is chilled, top it with the macerated strawberries and whipped cream before serving.

Notes

  • For best results, use room temperature cream cheese to avoid lumps.
  • You can substitute the strawberries with other berries if desired.
  • This cheesecake can be made a day in advance for easier serving.
