Description
A deliciously tart and sweet pie made with fresh strawberries and rhubarb, encased in a flaky crust.
Ingredients

- 2 cups fresh strawberries, hulled and halved
- 2 cups rhubarb, chopped
- 1 cup granulated sugar
- 1/4 cup all-purpose flour
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1 tablespoon butter, cut into small pieces
- 1 pie crust (store-bought or homemade)
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, combine the strawberries, rhubarb, sugar, flour, lemon juice, vanilla extract, and salt. Toss until the fruit is evenly coated.
- Pour the filling into the pie crust, and dot with butter pieces.
- Cover with the second pie crust, seal the edges, and cut slits in the top crust to allow steam to escape.
- Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for an additional 35-40 minutes, or until the filling is bubbly and the crust is golden brown.
- Let cool before serving.
Notes
- Serve with whipped cream or vanilla ice cream for a delicious dessert.
- You can adjust the amount of sugar based on the sweetness of the strawberries.
