A deliciously tart and sweet pie made with fresh strawberries and rhubarb, encased in a flaky crust.


Ingredients

  • 2 cups fresh strawberries, hulled and halved
  • 2 cups rhubarb, chopped
  • 1 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 tablespoon butter, cut into small pieces
  • 1 pie crust (store-bought or homemade)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the strawberries, rhubarb, sugar, flour, lemon juice, vanilla extract, and salt. Toss until the fruit is evenly coated.
  3. Pour the filling into the pie crust, and dot with butter pieces.
  4. Cover with the second pie crust, seal the edges, and cut slits in the top crust to allow steam to escape.
  5. Bake in the preheated oven for 15 minutes. Reduce the temperature to 350°F (175°C) and continue baking for an additional 35-40 minutes, or until the filling is bubbly and the crust is golden brown.
  6. Let cool before serving.

Notes

  • Serve with whipped cream or vanilla ice cream for a delicious dessert.
  • You can adjust the amount of sugar based on the sweetness of the strawberries.
