  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (60 g) powdered sugar
  • 1 tsp vanilla extract
  • 1 cup (150 g) fresh strawberries, diced
  • 1 egg, beaten (for egg wash)
  • 1 tbsp granulated sugar (for topping)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy.
  3. Roll out the puff pastry on a lightly floured surface and cut it into 8 equal squares.
  4. Place a tablespoon of the cream cheese mixture in the center of each square, then add a few pieces of diced strawberries on top.
  5. Fold the corners of the pastry squares over the filling, pinching to seal them securely.
  6. Brush the tops of the pastries with the beaten egg and sprinkle with granulated sugar.
  7. Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed.
