Instructions
- In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.
- Divide the mixture evenly into serving cups, pressing it down to form a crust at the bottom.
- In a large bowl, beat the softened cream cheese until smooth.
- Add powdered sugar and vanilla extract, mixing until fully combined.
- In a separate bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully combined.
- Spoon the cheesecake mixture on top of the crust in each cup.
- Top with chopped strawberries and additional whole strawberries if desired.
- Refrigerate for at least 2 hours before serving to allow the cheesecake to set.
