- 1 cup graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 1 cup fresh strawberries, diced
- Whipped cream, for topping
Instructions
- In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter until well combined.
- Press the mixture into the bottom of a lined mini muffin tin to form the crust. Chill in the refrigerator for 10 minutes.
- In a separate bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, mixing until well combined.
- Fold in the diced strawberries gently into the cream cheese mixture.
- Spoon the cheesecake mixture into the chilled crusts, filling each to the top.
- Chill in the refrigerator for at least 2 hours or until set.
- Serve with a dollop of whipped cream on top.
Notes
- You can use any type of berry in place of strawberries for a different flavor.
- For added flavor, consider adding a splash of lemon juice to the cream cheese mixture.
