These strawberry cheesecake bars are creamy, delicious, and topped with fresh strawberries for a perfect dessert treat.

- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, sliced
- 1/4 cup strawberry jam
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
- In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish to form a crust.
- In a large bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, and mix until combined.
- Add eggs, one at a time, mixing thoroughly after each addition. Pour the cream cheese mixture over the crust in the baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the center is set and slightly jiggly. Remove from the oven and let cool completely.
- Once cooled, top with sliced strawberries and drizzle strawberry jam over the top.
- Refrigerate for at least 2 hours before slicing into bars. Serve chilled.
Notes
- For best results, use full-fat cream cheese for a rich and creamy texture.
- Feel free to substitute fresh strawberries with other berries or fruit toppings as desired.
