Description

  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup fresh strawberries, sliced
  • 1/4 cup strawberry jam

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper, leaving some overhang for easy removal.
  2. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish to form a crust.
  3. In a large bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract, and mix until combined.
  4. Add eggs, one at a time, mixing thoroughly after each addition. Pour the cream cheese mixture over the crust in the baking dish.
  5. Bake in the preheated oven for 25-30 minutes, or until the center is set and slightly jiggly. Remove from the oven and let cool completely.
  6. Once cooled, top with sliced strawberries and drizzle strawberry jam over the top.
  7. Refrigerate for at least 2 hours before slicing into bars. Serve chilled.
