Ingredients

  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract

  • 1 cup fresh strawberries, pureed
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • Fresh strawberries for garnish

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the flour mixture.
  5. Gently fold in the fresh strawberry puree until just combined.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops.
  7. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
  8. While the cakes are cooling, whip the heavy cream with powdered sugar until soft peaks form.
  9. Once the cakes are completely cooled, place one layer on a serving platter, spread a layer of whipped cream on top, and add sliced fresh strawberries.
  10. Top with the second layer of cake and use the remaining whipped cream to frost the top and sides of the cake. Garnish with additional fresh strawberries.
  11. Slice and serve the strawberry cake chilled or at room temperature.

Notes

  • For added flavor, you can add a few drops of strawberry extract to the batter.
  • Make sure to use ripe strawberries for the best flavor.
