Description
A light and fluffy strawberry cake that is perfect for any occasion, topped with fresh strawberries and whipped cream.

- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsalted butter, softened
- 1 cup whole milk
- 3 large eggs
- 1 tablespoon baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
- 1 cup fresh strawberries, pureed
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
- Fresh strawberries for garnish
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, combine the flour, baking powder, and salt. Gradually add the dry ingredients to the butter mixture, alternating with the milk, beginning and ending with the flour mixture.
- Gently fold in the fresh strawberry puree until just combined.
- Divide the batter evenly between the prepared cake pans and smooth the tops.
- Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
- While the cakes are cooling, whip the heavy cream with powdered sugar until soft peaks form.
- Once the cakes are completely cooled, place one layer on a serving platter, spread a layer of whipped cream on top, and add sliced fresh strawberries.
- Top with the second layer of cake and use the remaining whipped cream to frost the top and sides of the cake. Garnish with additional fresh strawberries.
- Slice and serve the strawberry cake chilled or at room temperature.
Notes
- For added flavor, you can add a few drops of strawberry extract to the batter.
- Make sure to use ripe strawberries for the best flavor.
- This cake can be made a day in advance; just store it in the refrigerator until serving.
