- 1 cup fresh dates, chopped
- 1/2 cup all-purpose flour
- 1/4 cup brown sugar
- 1/4 cup unsalted butter, softened
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup toffee sauce
Instructions
- Preheat the oven to 350°F (175°C).
- Soak the chopped fresh dates in boiling water for 10 minutes to soften them.
- In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the soaked dates, baking soda, vanilla extract, and salt to the mixture and stir until combined.
- Gradually fold in the all-purpose flour until just combined, being careful not to overmix.
- Spoon the batter into a greased mini muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 15-20 minutes or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the tin for 5 minutes before transferring to a wire rack.
- Drizzle with toffee sauce while still warm.
- Chill the bites in the refrigerator for at least 30 minutes before serving to enhance the flavors.
- Serve warm or at room temperature.
