- 1 lb ground beef
- 1 cup chopped onions
- 1 cup chopped carrots
- 1 cup chopped celery
- 2 cups beef broth
- 1 cup frozen peas
- 1 cup mashed potatoes
- 1 tsp salt
- 1 tsp pepper
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Cook until softened.
- Add ground beef and cook until browned.
- Stir in beef broth, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Mix in frozen peas.
- Transfer mixture to a baking dish and top with mashed potatoes.
- Bake at 375°F for 25 minutes or until golden brown.
Notes
- Can substitute ground turkey for beef.
- Use store-bought mashed potatoes for convenience.
- Garnish with parsley for color.
