Description
A traditional meal for St. Patrick’s Day featuring corned beef and cabbage.
Ingredients

- 3 lbs corned beef brisket
- 1 medium onion, quartered
- 3 cloves garlic, minced
- 4 cups water
- 1 teaspoon black peppercorns
- 1 head green cabbage, cut into wedges
- 4 carrots, peeled and cut into chunks
- 8 small red potatoes, halved
Instructions
- Place the corned beef in a large pot.
- Add the onion, garlic, water, and peppercorns.
- Bring to a boil, then reduce heat to low and cover.
- Simmer for 2.5 hours.
- Add cabbage, carrots, and potatoes to the pot.
- Cook for an additional 30-40 minutes until vegetables are tender.
- Remove the meat and let it rest for 10 minutes before slicing.
- Serve with vegetables on the side.
Notes
- Choose a brisket with a good amount of fat for better flavor.
- You can add other vegetables like parsnips or turnips.
- This meal pairs well with Irish soda bread.
