Description
A festive dish to celebrate St. Patrick’s Day.
Ingredients

- 2 lbs corned beef
- 1 cabbage, chopped
- 4 carrots, sliced
- 6 potatoes, quartered
- 1 onion, quartered
- 4 cups beef broth
- 1 tbsp mustard
- 1 tsp black pepper
- 2 cloves garlic, minced
Instructions
- Place corned beef in a large pot.
- Add beef broth, mustard, black pepper, and garlic.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Add onions, carrots, and potatoes to the pot.
- Simmer for another 30 minutes until vegetables are tender.
- Add chopped cabbage and cook for an additional 10 minutes.
- Slice corned beef and serve with vegetables.
Notes
- Adjust seasoning to taste.
- Leftovers can be used for sandwiches.
- Serve with Irish soda bread.
