Ingredients

  • 2 lbs corned beef
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup stout beer
  • 4 carrots, chopped
  • 4 potatoes, quartered
  • 1 small head of cabbage, cut into wedges
  • Salt and pepper to taste

Instructions

  1. Rinse the corned beef under cold water.
  2. In a large pot, place the corned beef, onion, and garlic.
  3. Add beef broth and stout beer.
  4. Bring to a boil, then reduce heat and simmer for 2 hours.
  5. Add carrots, potatoes, and cabbage to the pot.
  6. Continue to cook for another 30 minutes or until vegetables are tender.
  7. Remove the corned beef and let it rest before slicing.
  8. Serve with vegetables and broth.

Notes

  • For a spicier flavor, add mustard seeds and peppercorns.
  • Leftovers can be used in sandwiches.
