Ingredients

- 2 lbs corned beef
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup stout beer
- 4 carrots, chopped
- 4 potatoes, quartered
- 1 small head of cabbage, cut into wedges
- Salt and pepper to taste
Instructions
- Rinse the corned beef under cold water.
- In a large pot, place the corned beef, onion, and garlic.
- Add beef broth and stout beer.
- Bring to a boil, then reduce heat and simmer for 2 hours.
- Add carrots, potatoes, and cabbage to the pot.
- Continue to cook for another 30 minutes or until vegetables are tender.
- Remove the corned beef and let it rest before slicing.
- Serve with vegetables and broth.
Notes
- For a spicier flavor, add mustard seeds and peppercorns.
- Leftovers can be used in sandwiches.
- Pair with Irish soda bread for a complete meal.
