Description
A festive dinner to celebrate St. Patrick’s Day with traditional Irish flavors.
Ingredients

- 4 cups of cabbage, chopped
- 1 pound of corned beef, sliced
- 4 medium potatoes, diced
- 2 carrots, sliced
- 1 onion, chopped
- 2 cups of beef broth
- 1 tablespoon of olive oil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the onions and sauté until translucent.
- Add the carrots and potatoes, cooking for 5 minutes.
- Pour in the beef broth and bring to a boil.
- Add the cabbage and corned beef.
- Reduce heat and simmer for 30 minutes until vegetables are tender.
- Season with salt and pepper before serving.
Notes
- Serve with traditional Irish soda bread.
- Leftovers can be stored in the refrigerator for up to 3 days.
