Description

Ingredients

  • 1 pound of corned beef, sliced
  • 4 medium potatoes, diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 2 cups of beef broth

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions and sauté until translucent.
  3. Add the carrots and potatoes, cooking for 5 minutes.
  4. Pour in the beef broth and bring to a boil.
  5. Add the cabbage and corned beef.
  6. Reduce heat and simmer for 30 minutes until vegetables are tender.
  7. Season with salt and pepper before serving.
