Description

A festive dinner to celebrate St. Patrick’s Day with traditional Irish dishes.


Ingredients

  • 2 lbs corned beef brisket
  • 1 head of cabbage, cut into wedges
  • 4 large carrots, peeled and chopped
  • 6 medium potatoes, peeled and quartered
  • 1 onion, quartered
  • 4 cups beef broth
  • 1 tablespoon mustard seeds
  • 1 tablespoon black peppercorns
  • 1 tablespoon coriander seeds

Instructions

  1. Place the corned beef in a large pot.
  2. Add the beef broth, mustard seeds, peppercorns, and coriander seeds.
  3. Bring to a boil, then reduce heat and simmer for 2 hours.
  4. Add potatoes, carrots, and onion to the pot.
  5. Simmer for an additional 30 minutes.
  6. Add cabbage and cook for 15 more minutes.
  7. Remove the meat and vegetables from the pot and let rest for a few minutes.
  8. Slice the corned beef and serve with the vegetables.

  • Serve with mustard for added flavor.
  • Leftovers can be used for sandwiches.
