A fresh and crunchy salad inspired by spring rolls.
Ingredients

- 2 cups mixed greens
- 1 cup shredded carrots
- 1 cup cucumber, sliced
- 1 cup red bell pepper, sliced
- 1/2 cup fresh cilantro, chopped
- 1/2 cup mint leaves, chopped
- 1/4 cup peanuts, chopped
- 1/4 cup rice noodles, cooked
- 3 tablespoons lime juice
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
Instructions
- Wash and dry the mixed greens.
- In a large bowl, combine mixed greens, carrots, cucumber, bell pepper, cilantro, and mint.
- Add the cooked rice noodles and peanuts to the salad.
- In a small bowl, whisk together lime juice, soy sauce, and sesame oil.
- Pour the dressing over the salad and toss gently.
- Serve immediately.

- Adjust the dressing to taste.
- Add protein like shrimp or tofu for a heartier meal.
- Store leftovers in the refrigerator for up to 2 days.
