Ingredients

  • 1 cup shredded lettuce
  • 1 cup grated carrots
  • 1/2 cup cucumber, julienned
  • 1/2 cup bell pepper, sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh cilantro leaves
  • 1/4 cup cooked shrimp or tofu (optional)
  • 1/4 cup peanut sauce for dipping

Instructions

  1. Prepare all vegetables and herbs by washing and cutting them.
  2. Soak rice paper wrappers in warm water for about 10 seconds until soft.
  3. Place the softened wrapper on a clean surface.
  4. Add a small amount of each filling in the center of the wrapper.
  5. Fold the sides over the filling and roll tightly from the bottom to the top.
  6. Repeat with remaining wrappers and fillings.
  7. Serve immediately with peanut sauce for dipping.
