- 1 cup rice paper wrappers
- 1 cup shredded lettuce
- 1 cup grated carrots
- 1/2 cup cucumber, julienned
- 1/2 cup bell pepper, sliced
- 1/4 cup fresh mint leaves
- 1/4 cup fresh cilantro leaves
- 1/4 cup cooked shrimp or tofu (optional)
- 1/4 cup peanut sauce for dipping
Instructions
- Prepare all vegetables and herbs by washing and cutting them.
- Soak rice paper wrappers in warm water for about 10 seconds until soft.
- Place the softened wrapper on a clean surface.
- Add a small amount of each filling in the center of the wrapper.
- Fold the sides over the filling and roll tightly from the bottom to the top.
- Repeat with remaining wrappers and fillings.
- Serve immediately with peanut sauce for dipping.
Notes
- Store any leftover spring rolls in an airtight container in the refrigerator.
