Ingredients

  • 1 lb asparagus, trimmed
  • 2 cups cherry tomatoes, halved
  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1/4 cup fresh basil, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a pot, combine quinoa and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes.
  3. On a baking sheet, toss asparagus and cherry tomatoes with olive oil, garlic, salt, and pepper.
  4. Roast vegetables for 15 minutes until tender.
  5. Fluff quinoa with a fork and mix in roasted vegetables and fresh basil.
  6. Serve warm.
