Ingredients
- Asparagus – 1 bunch
- Peas – 1 cup
- Radishes – 1 cup, sliced
- Fresh herbs (parsley, dill, mint) – 1/4 cup, chopped
- Lemon – 1, juiced
- Olive oil – 2 tablespoons
- Salt – to taste
- Pepper – to taste
Instructions
- Wash and trim the asparagus.
- In a pot, bring water to a boil and blanch asparagus for 2-3 minutes.
- Add peas and radishes, cooking for another 2 minutes.
- Drain and transfer vegetables to a bowl of ice water.
- In a separate bowl, mix lemon juice, olive oil, salt, and pepper.
- Toss the blanched vegetables with the dressing and fresh herbs.
- Serve chilled or at room temperature.
