A fresh and colorful spring pasta salad perfect for warm days.
Ingredients

- 8 ounces of pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, feta cheese, and olives.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.

- Use whole grain pasta for a healthier option.
- Feel free to add your favorite vegetables.
