Ingredients

- 8 oz pasta
- 2 cups mixed seasonal vegetables (bell peppers, zucchini, cherry tomatoes)
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup grated Parmesan cheese
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions.
- In a large skillet, heat olive oil over medium heat.
- Add garlic and sauté for 1 minute.
- Add the mixed vegetables and cook until tender, about 5-7 minutes.
- Season with salt and pepper.
- Drain the pasta and add it to the skillet with vegetables.
- Toss to combine and heat through.
- Serve topped with Parmesan cheese and fresh basil.

- For a vegan option, omit cheese or use a plant-based alternative.
