Ingredients

- 2 cups fresh spinach
- 1 cup cooked rice
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add fresh spinach, cook until wilted.
- Pour in vegetable broth, bring to a boil.
- Add cooked rice, simmer for 5 minutes.
- Season with salt and pepper.
- Serve hot.

- For a creamier soup, blend before adding rice.
