Ingredients

- 2 cups fresh spinach
- 4 cups vegetable broth
- 2 eggs
- 1 onion, chopped
- 2 cloves garlic, minced

Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic; sauté until onion is translucent.
- Add spinach and cook until wilted.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- In a separate bowl, whisk eggs.
- Spoon some soup into the bowl with eggs; mix well.
- Slowly add egg mixture to the soup, stirring constantly.
- Season with salt and pepper.
- Serve hot.
