Description
A creamy and healthy spinach soup with coconut milk.
Ingredients

- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh spinach
- 1 can (13.5 oz) coconut milk
- 2 cups vegetable broth
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and cook until translucent.
- Stir in minced garlic and cook for 1 minute.
- Add spinach and cook until wilted.
- Pour in coconut milk and vegetable broth.
- Bring to a simmer and cook for 10 minutes.
- Blend the soup until smooth.
- Season with salt and pepper.
- Serve warm.
Notes
- Can use frozen spinach if fresh is not available.
- Add chili flakes for some heat.
- Garnish with toasted coconut if desired.
