Description

A creamy and healthy spinach soup with coconut milk.


Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh spinach
  • 1 can (13.5 oz) coconut milk
  • 2 cups vegetable broth
  • Salt to taste
  • Pepper to taste

Instructions

  1. Heat olive oil in a pot over medium heat.
  2. Add chopped onion and cook until translucent.
  3. Stir in minced garlic and cook for 1 minute.
  4. Add spinach and cook until wilted.
  5. Pour in coconut milk and vegetable broth.
  6. Bring to a simmer and cook for 10 minutes.
  7. Blend the soup until smooth.
  8. Season with salt and pepper.
  9. Serve warm.

Notes

  • Can use frozen spinach if fresh is not available.
  • Add chili flakes for some heat.
  • Garnish with toasted coconut if desired.
