- 1 cup sushi rice
- 1 1/4 cups water
- 1 tablespoon rice vinegar
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 8 ounces sushi-grade tuna, diced
- 2 tablespoons mayonnaise
- 1 tablespoon Sriracha sauce (adjust to taste)
- 1 teaspoon soy sauce
- 1 avocado, sliced
- 1/2 cucumber, thinly sliced
- 1/4 cup green onions, chopped
- 1 tablespoon sesame seeds
- Nori sheets, cut into strips (optional)
- Pickled ginger (for serving, optional)
Instructions
- Rinse the sushi rice under cold water until the water runs clear. Combine the rinsed rice and water in a saucepan and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes until the water is absorbed. Remove from heat and let sit, covered, for 10 minutes.
- In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Once the rice has rested, fluff it with a fork and gently mix in the vinegar mixture. Allow the rice to cool to room temperature.
- In a separate bowl, combine the diced tuna, mayonnaise, Sriracha, and soy sauce. Adjust the Sriracha according to your spice preference.
- To assemble the poke bowl, place a scoop of sushi rice at the bottom of a bowl. Top with the spicy tuna mixture, sliced avocado, cucumber, green onions, and sesame seeds.
- If desired, garnish with nori strips and serve with pickled ginger on the side.
Notes
- You can substitute the tuna with salmon or tofu for a different protein option.
- Feel free to add any other toppings you prefer, such as radishes or edamame.
