- 2 boneless chicken breasts (sliced)
- 1 cup cooked rice
- 1/2 cup shredded carrots
- 1/2 cup chopped cucumber
- 1/4 cup chopped cilantro
- 1/4 cup chopped peanuts
- 1/4 cup peanut butter
- 2 tbsp soy sauce
- 1 tbsp lime juice
- 1 tbsp sriracha
- 1 tbsp honey
- 1 clove garlic (minced)
- 1 tsp ginger (grated)
Instructions
- Cook rice according to package instructions.
- Mix peanut butter, soy sauce, lime juice, sriracha, honey, garlic, and ginger to make the sauce.
- Cook chicken in a pan over medium heat until fully done.
- Add half the sauce to the chicken, stir well, and cook for 2 more minutes.
- Assemble bowls with rice, chicken, carrots, cucumber, and cilantro.
- Drizzle remaining sauce on top and sprinkle with peanuts.
Notes
- Adjust sriracha for less or more spice.
- Use brown rice for a healthier option.
- Store leftovers in an airtight container for up to 2 days.
