A rich and spicy Nigerian chicken stew packed with bold West African flavors. Perfect for pairing with rice, yam, or plantains.
Ingredients

- 1 whole chicken, cut into pieces
- 3 tbsp vegetable oil
- 2 onions, chopped
- 4 tomatoes, blended
- 2 red bell peppers, blended
- 2 scotch bonnet peppers, blended
- 3 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tsp curry powder
- 1 tsp thyme
- 1 tsp paprika
- 1 chicken stock cube
- Salt to taste
Instructions
- Heat oil in a pot and fry the chicken pieces until golden brown. Remove and set aside.
- In the same oil, sauté onions until translucent.
- Add garlic and ginger, stir for 1 minute.
- Pour in blended tomatoes, bell peppers, and scotch bonnet peppers. Cook for 10 minutes.
- Add curry powder, thyme, paprika, and stock cube. Stir well.
- Return the fried chicken to the pot. Cover and simmer for 20 minutes.
- Adjust salt to taste and serve hot.
Notes
- Adjust scotch bonnet peppers for less heat.
- Use fresh tomatoes and peppers for best flavor.
- Store leftovers in the fridge for up to 3 days.
