Ingredients

  • 1 whole chicken, cut into pieces
  • 3 tbsp vegetable oil
  • 2 onions, chopped
  • 4 tomatoes, blended
  • 2 red bell peppers, blended
  • 2 scotch bonnet peppers, blended
  • 3 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tsp curry powder
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 chicken stock cube
  • Salt to taste

Instructions

  1. Heat oil in a pot and fry the chicken pieces until golden brown. Remove and set aside.
  2. In the same oil, sauté onions until translucent.
  3. Add garlic and ginger, stir for 1 minute.
  4. Pour in blended tomatoes, bell peppers, and scotch bonnet peppers. Cook for 10 minutes.
  5. Add curry powder, thyme, paprika, and stock cube. Stir well.
  6. Return the fried chicken to the pot. Cover and simmer for 20 minutes.
  7. Adjust salt to taste and serve hot.

Notes

  • Adjust scotch bonnet peppers for less heat.
  • Use fresh tomatoes and peppers for best flavor.
  • Store leftovers in the fridge for up to 3 days.
