Ingredients

  • 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1/4 cup grated parmesan cheese
  • 1 tsp red pepper flakes
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp lemon juice
  • 810 wooden skewers, soaked in water for 30 minutes

Instructions

  1. In a bowl, mix olive oil, minced garlic, parmesan cheese, red pepper flakes, paprika, salt, black pepper, parsley, and lemon juice.
  2. Add chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Thread chicken onto soaked skewers, leaving small gaps between pieces.
  4. Preheat grill or grill pan to medium-high heat.
  5. Grill skewers for 4-5 minutes per side until chicken is cooked through (internal temp 165°F/74°C).
  6. Remove from heat, garnish with extra parmesan and parsley if desired, and serve immediately.

Notes

  • For extra flavor, marinate chicken for up to 4 hours.
  • If using bamboo skewers, soak them well to prevent burning.
  • Adjust red pepper flakes for more or less heat.
  • Serve with lemon wedges for a fresh touch.
