- 1.5 lbs (680g) boneless, skinless chicken breasts, cut into 1-inch cubes
- 1/4 cup olive oil
- 3 cloves garlic, minced
- 1/4 cup grated parmesan cheese
- 1 tsp red pepper flakes
- 1 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- 8–10 wooden skewers, soaked in water for 30 minutes
Instructions
- In a bowl, mix olive oil, minced garlic, parmesan cheese, red pepper flakes, paprika, salt, black pepper, parsley, and lemon juice.
- Add chicken cubes to the marinade and toss to coat evenly. Cover and refrigerate for at least 30 minutes.
- Thread chicken onto soaked skewers, leaving small gaps between pieces.
- Preheat grill or grill pan to medium-high heat.
- Grill skewers for 4-5 minutes per side until chicken is cooked through (internal temp 165°F/74°C).
- Remove from heat, garnish with extra parmesan and parsley if desired, and serve immediately.
Notes
- For extra flavor, marinate chicken for up to 4 hours.
- If using bamboo skewers, soak them well to prevent burning.
- Adjust red pepper flakes for more or less heat.
- Serve with lemon wedges for a fresh touch.
