- 1 lb (450g) shrimp, peeled and deveined
- 1 can (14 oz) coconut milk
- 2 cups chicken or vegetable broth
- 1 tbsp red curry paste
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 1 tbsp brown sugar
- 1 red bell pepper, sliced
- 1 cup mushrooms, sliced
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 tbsp vegetable oil
- Fresh cilantro for garnish
Instructions
- Heat oil in a pot over medium heat. Add garlic and ginger, sauté for 1 minute.
- Add red curry paste, stir for 30 seconds until fragrant.
- Pour in coconut milk and broth, bring to a simmer.
- Add fish sauce, lime juice, and brown sugar. Stir well.
- Add bell pepper and mushrooms, cook for 5 minutes.
- Add shrimp and cook for 3-4 minutes until pink and opaque.
- Garnish with cilantro and serve hot.
Notes
- Adjust spice level with more or less curry paste.
- Use fresh lime juice for the best flavor.
- Serve with rice or crusty bread.
