Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 2 cups chicken or vegetable broth
  • 1 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tbsp brown sugar
  • 1 red bell pepper, sliced
  • 1 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tbsp vegetable oil
  • Fresh cilantro for garnish

Instructions

  1. Heat oil in a pot over medium heat. Add garlic and ginger, sauté for 1 minute.
  2. Add red curry paste, stir for 30 seconds until fragrant.
  3. Pour in coconut milk and broth, bring to a simmer.
  4. Add fish sauce, lime juice, and brown sugar. Stir well.
  5. Add bell pepper and mushrooms, cook for 5 minutes.
  6. Add shrimp and cook for 3-4 minutes until pink and opaque.
  7. Garnish with cilantro and serve hot.

  • Adjust spice level with more or less curry paste.
